Sernik cytrynowy, z syropem cytrynowym/ Lemon cheesecake.




Sernik podobny jadlam w jednej z brytyjskiej kawiarni.
Nie moglam sie oprzec aby go nie odtworzyc w domu. I udalo mi sie prawie. Prawie, bo poprzez dodanie do sernika polskiego bialego sera, nadalam mu ciezszego charakteru.
Sernik jest z tych ciezszych, blisko mu w konsystencji do polskich sernikow, ale masa nie jest zbita a mazista, lekko kremowa. Mimo ze nie jestem ogromna fanka wypiekow/ deserow cytrynowych,  na dzisiaj to moj ulubiony sernik i bede do niego wracac i dalej eksperymentowac :) 
Ten sernik jest w smaku delikatny i nieprzesadnie cytrynowy.


Sernik cytrynowy
z syropem cytrynowym


na spod:

120 g ciastek digestive
50 g masla, plynnego i cieplego

na mase:

600 g twarogu
200 g kremowego serka, np. Philadelphia
55 ml soku cytrynowego ( z swiezo wycisnietej cytryny)
120 ml smietany 30 % albo 36 %
3 lyzki maki, z lekkim czubem
lyzeczka ekstraktu cytrynowego
3 jajka, sredniej wielkosci
200 g cukru pudru

na syrop:
90 g cukru
skorka starta z 2 cytryn
sok wycisniety z jednej duzej cytryny


Piekarnik nagrzewamy do 150 stopni Celsjusza.
Forme o srednicy 18- 21 cm wykladamy papierem do pieczenia ( dno formy). Wypuszczamy papier na zewnatrz i zamykamy obrecz formy. Boki formy natluszczamy lekko, mozna maslem.
Ciasteczka miksujemy na piasek albo w food processorze, albo wkladamy je do mocnego woreczka i walkiem do ciasta. Rozdrobnione ciasteczka laczymy z plynnym maslem. Wykladamy ciasteczkami dno formy. Forme owijamy z zewnatrz folia aluminiowa tak aby uszczelnic ja przed woda ( sernik bedziemy piec w kapieli wodnej), najlepiej kilka razy ( ja owijalam okolo 3-4 razy).
Forme wstawiamy do lodowki.
Ser kremowy i twarog laczymy w duzej misce z cukrem pudrem. Blendujemy az uzyskamy prawie gladka mase ( tj. okolo 4-5 minut). Nastepnie wlewamy aromat, nadal blenderujac, i bardzo wolnym strumieniem wlewamy sok z cytryny. Do misy wlewamy smietane i wsypujemy make. Miksujemy okolo 2 minut. I nastepnie wbijamy jajka. Miksujemy okolo 2 minut.
Gotowa mase wlewamy do formy wylozonej ciasteczkami.
Do prostokatnej, dosyc glebokiej formy ( wiekszej od naszej formy z sernikiem) wstawiamy nasza forme z sernikiem. Przegotowana wode ( z czajnika) wlewamy ostroznie do prostokatnej formy, mniej wiecej do 2/3 wysokosci. Bardzo ostroznie wstawiamy forme prostokatna ( w niej jest forma okragla :) na srodkowy poziom piekarnika i pieczemy 1h i 10 minut.
Na 10 minut przed pieczeniem przygotowujemy syrop.
                                                              Mieszamy sok z cukrem.
I podgrzewamy, mieszajac czesto i obserwujac, to wazne. Syrop nie moze sie przypalic a bardzo szybko gestnieje. Syrop podgrzewamy kilka minut az nabierze burszynowego koloru, to stanie sie bardzo szybko, wiec trzeba obserwowac przez caly czas gotowania.  
Jak tylko uzyska pozadany kolor, bardzo sprawnie i ostroznie zdejmujemy syrop z ognia, sernik wyjmujemy z piekarnika ( po tym czasie powinien miec sciety wierzch i dodatkowo '' potrzasniety'' bedzie wygladal na upieczony, nie trzeba tego sprawdzac patyczkiem) Syrop wylewamy na wierzch sernika i poruszajac delikatnie forma, rozprowadzamy syrop rownomiernie (bez lyzek i innych pomocy, one pozostawia slad). Na brzegach rozprowadzamy skorke cytrynowa, lekko ja przyciskajac. Wstawiamy sernik ponownie do piekarnika na okolo 5 minut. Po czym piekarnik wylaczamy. Po pol godziny sernik wyjmujemy i studzimy w formie. Po czym wstawiamy do lodowki na minimum 12 h. Po tym czasie nozem oddzielamy sernik od scianek formy, dopiero po tym odpinamy obracz i wyjmujemy sernik na patere/ talerz.

Just a couple of weeks ago I went for a coffee and a piece of cake to a kind of known-to-everybody- else-coffeehouse. And there I found relatively decent selection of cakes and coffee.
I picked up a piece of cheesecake and that is how and why here I have posted a recipe for a lemon cheesecake.
The lemon cheesecake I had that day tasted absolutely delicious. I could not resist trying to make it at home. Although I managed to copy the taste and texture of the cheesecake I had, I used a slightly different kind of cheese. Therefore this lemon cheesecake which you can see in the pics above, is a little bit heavier, denser in the texture but still lemony and not overwhelmingly lemony at all.
I must say that I am not a very big fan of lemon cakes and/or desserts. However, this one is lovely and I am saying it not because I made it. Everybody else who tried it said it was a real treat.



Lemon cheesecake with lemon syrup

for the base:

120 g digestive biscuits
50 g unsalted butter


for the filling:

600 g curd cheese* or ricotta cheese
200 g cream cheese such as Philadelphia
200 g icing sugar
55 ml lemon juice (freshly squeezed)
1 tsp lemon extract
3 medium-sized eggs
120 ml double cream
3 tbp (slightly heaped) all-purpose flour

for the syrup:
90 g sugar
lemon juice ( freshly squeezed of one large lemon)


Preheat the oven to 150 degrees Celsius.
Line up the bottom of 18-20 cm springform tin with non-stick baking paper. Let the edges of the paper out while closing the tin. Grease the sides of the tin with a little tiny bit of butter.
Put the digestives and melted and warm butter in a food processor. Put the food processor at the highest speed and crumble the biscuits until thoroughly combined with the butter.
Press the biscuits and butter against the bottom of the tin.
Wrap up the tin with aluminium foil (from the outside only).
After that place the tin in the fridge.
If you decide to use curd cheese which is of a heavier and crumbly texture, you first have to mix it so it becomes smooth. So place the curd cheese and cream cheese along with sugar in a large bowl and mix it until well- combined. It may take about 4-5 minutes. Carry on mixing and add, little by little, the lemon extract and lemon juice.
Add the double cream and flour, combine it with the cheese.
Add the eggs, mix it with the rest of the ingredients for about 2 minutes and not longer.
Pour the mixture into the tin. Place the springform tin in a bigger rectangular tin. Boil some water. Pour the hot water into the rectangular tin and very carefully place the tin (with the springform tin in it) on the middle shelf of the oven. Bake for 1 hour and 10 minutes.
About 10 minutes before the cheesecake is set, prepare the syrup: combine the sugar with the lemon juice.
Pour it into a heavy-based saucepan and heat it up over a medium heat, stirring quite often. Be careful not to burn it. You really should watch it the whole time. It only takes a few minutes the syrup becomes amber colour and then immediately take it off the heat, take the cheesecake out of the oven ( the top should be set, you can shake the tin and check this way) and pour the syrup over the top. Manouver with the tin so you get the syrup spread out evenly, do not use a spoon to do that as it will leave a trace and you want the top to remain smooth.
Leave it to cool slightly and then put it into the fridge for about 12 hours.
